Try my Irish Apple Cake for a sweet way to celebrate this St. Patrick’s Day! The cake is loaded with juicy Granny Smith Apples and nicely spiced with cinnamon and vanilla.
Special occasions in our house are almost always celebrated with homemade goodies. Valentine’s Day is no exception. When I was a kid, my mom would mark the day by making Rice Krispie treats. To add a special holiday touch, she cut them with a heart-shaped cookie cutter and packaged them with loving notes before sticking them in my school lunch.
Each Christmas my mom, grandmother and I bake dozens of cookies to give as gifts, leave for Santa or, more realistically, devour the second they are out of the oven. Of all the cookies we bake, the type that seems to go the fastest is my mom’s Chocolate Peppermint Crinkle Cookies. They are crisp on the outside and gooey, almost brownie-like, on the inside. The cookies are extremely chocolatey with just the right amount of peppermint refreshment. Try baking some this holiday season using your Farmer Owned ingredients and they might become your favorite holiday cookie too!
Raspberry Hand Pies make perfect Valentine’s Day gifts for everyone in your life. The crust is light, flakey and absolutely stuffed with juicy raspberries. With the help of a food processor and heart cookie cutter, this recipe comes together in a flash. Give some to someone special today and spread the love.
Being Northern Irish, my family has shared many Irish recipes on our St. Patrick’s Day table. My mom is famous for her Potato Bread and I am constantly asked for my raisin-studded Soda Bread recipe. Most have been in the family for years, passed down through generations. This year, in preparation for St. Patrick’s Day, I decided to break with tradition and try something new, still Irish, but new. I made a chocolate Irish Whiskey Cake, drizzled with my favorite dark chocolate glaze.
Valentine’s Day has always been one of my favorite holidays because it is an opportunity to express love to your family, your friends, and maybe even that special someone who doesn’t know the depth of your feelings yet but is about to. So if you, like me, have someone in your life you’d like to say “I love you” to, say it with cake!
