1 20-ounce can pineapple tidbits, reserving 1/4 cup juice
1/4 cup chopped red pepper
1/4 cup chopped fresh cilantro
2 tablespoons chopped red onion
1 tablespoon jalapeno pepper, seeded and minced
2 teaspoons lime peel, freshly grated
1/4 teaspoon salt
Combine all ingredients in large bowl and mix well. Cover and refrigerate for 2 hours to allow flavors to blend.
Serve with fish, poultry or meat.
